  1. Combine beer, onions, celery, salt, peppercorns, bay leaves, and garlic in a saucepan, over a moderate flame.
  2. Bring to a boil, reduce heat, and simmer for 10 minutes.
  3. Add shrimp, return to the boil, remove from heat, cover, and allow shrimp to cool in liquid.
  4. Chill for 1–96 hours.
  5. Serve slightly chilled.
