Bird's Nest Cupcakes

Birds are popular pets in Strawberryland, from Plum Puddin's Elderberry Owl to Lime Chiffon's Parfait Parrot. These cute little cupcakes become bird's nest with some frosting, shredded dyed coconut, and your choice of candy eggs. Make sure to eat them before a bird tries to move in!

Ingredients

• 2 cups shredded coconut
• 3 drops green food coloring
• 24 chocolate cupcakes
• 3 cups vanilla buttercream
• 72 jelly beans or chocolate eggs

Directions

1. Place shredded coconut in a shallow dish.
2. Add a few drops of food coloring and stir with a fork until coconut is evenly dyed.
3. Frost each cupcake with 2 tablespoons buttercream, then smooth the top.
4. Dip top in the coconut.
5. Nestle 3 jelly beans or chocolate eggs in the middle of each cupcake.
