Ingredients
- 1/2 cup uncooked regular long grain rice
- 1/4 cup green bell pepper, chopped
- 1/2 cup water
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 small zucchini, sliced
- 15 oz Black-Eyed Peas, rinsed and
- 16 oz stewed tomatoes, undrained
- 2 tbsp fresh parsley, chopped
Directions
Heat all ingredients except parsley to boiling in 2 qt. saucepan; reduce heat. Cover and simmer 20 minutes. stir in parsley
