- 2 poblano peppers, roasted
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 tablespoon fresh chopped cilantro
- 1 garlic clove, crushed
- ¼ teaspoon salt
- 1 medium-size red pepper, chopped
- 1 x 16-ounce can black beans, rinsed and drained

Directions[]
- Combine poblano peppers, lime juice, olive oil, cilantro, garlic and salt in blender.
- Blend until smooth.
- Combine rice, black beans and red pepper in large bowl, add poblano pesto; mix well.
