blackberry cordial

4 quarts blackberries

3 cups sugar

1 tablespoons whole cloves

1 tablespoon whole cinnamon

1 tablespoon whole nutmeg

crush the blackberries and simmer until soft. strain through a

cloth or jelly bag and measure. about 2 quarts juice should be

the yield. add the sugar to the juice, stirring until sugar is

dissolved. tie the spices in a bag and drop into the juice.

simmer for 30 minutes, then discard the spice bag. bring juice

to a boil and pour immediately into hot sterilized jars, leaving

1/4 inch head space. adjust caps and tighten.
