1. Shred cabbage through a food processor outfitted with a fine metal blade.
  2. Heat butter in a large sauté pan over medium-high heat.
  3. Stir in apple, onion, bacon, and garlic.
  4. Cook until onion is translucent, about 6 minutes.
  5. Stir in cabbage, vinegar, honey, salt and black pepper.
  6. Simmer, stirring frequently, for 20 minutes.
  7. Stir in the potato and cook until all of the liquid has been absorbed, about 5 minutes.
