  1. Discard the tough stem from the broccoli and coarsely chop.
  2. Melt butter, add the onion and apples.
  3. Cover and cook for 10 minutes.
  4. Add the stock and broccoli.
  5. Bring to a boil, cover and simmer for 15 minutes.
  6. Purée the soup, return to the saucepan and heat slowly.
  7. Add pepper and cream.
  8. Serve with croutons.
