Ingredients[]
- 2 tablespoons seasoned breadcrumbs
- 1 tablespoon Parmesan cheese, grated
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 teaspoons water
- 1/2 teaspoon olive oil
- 4 plum tomatoes
- Cooking spray
Directions[]
- Combine breadcrumbs, cheese, salt, and pepper, stirring to combine.
- Add water and oil, stirring until moist.
- Halve tomatoes lengthwise; sprinkle evenly with breadcrumb mixture.
- Place tomato halves, cut sides up, in a baking pan coated with cooking spray.
- Broil 2 minutes or until golden brown.
Yield: 4 servings
