I like to make a double or triple batch of these muffins to freeze. They can be popped in the microwave for a minute to reheat. Enjoy a warm muffin on the way out the door! - Jill Ball, Highland, UT
Ingredients[]
- 2 c. all-purpose flour
- 1 c. brown sugar, packed
- 1 t. baking soda
- 1/4 t. salt
- 1/2 c. butter, softened
- 1 egg, beaten
- 1 c. milk
- 1 t. vanilla extract
- Optional: 1/2 c. chopped nuts
Directions[]
- Combine all ingredients in a large bowl; stir until moistened.
- Fill greased muffin cups about 2/3 full.
- Bake at 375 degrees for 10 to 12 minutes.
Yield: Makes 2 dozen
