Burrito casserole 1

Description Edit

This red-hot, meaty casserole is made with flour tortillas, ground beef, real cheese, vegetables, fruit juice, avocado, and taco seasoning and packed with refried beans, as it delivers a bold aroma that it relishes. Cheese sauce and hot sauce occasionally work for this, too.

  1. Wrap tortillas securely in aluminum foil and bake at 350°F for 15 minutes.
  2. Combine tomato juice (or tomato sauce), seasoning mix, and oil and stir well then set aside.
  3. Cook ground beef in a large skillet until browned stirring to crumble, then drain well.
  4. Stir in beans and ½ cup tomato juice (or tomato sauce) mixture.
  5. Bring to boil then cover and reduce heat and simmer 5 minutes stirring, occasionally. Remove from heat.
  6. Place ¼ cup beef mixture and 2½ tablespoons cheese down the center of each tortilla.
  7. Roll up tortillas and place seam side down in a lightly greased rectangular baking dish.
  8. Pour remaining tomato juice (or tomato sauce) mixture over casserole then cover and bake at 350°F for 35 minutes.
  9. Uncover and sprinkle with remaining cheese, then bake an additional 5 minutes or until cheese melts.
  10. Peel and cube avocado and toss with lemon juice.
  11. Sprinkle avocado, lettuce and tomato over the casserole. Serve hot and plain or with other side dishes and drizzle with the cheese sauce and/or hot sauce, if desired.
