For Yolanda Powers of Decatur, Alabama, the best gifts come from the heart - and her kitchen. When her four kids were young, she began baking cakes and pies for gifts. Yolanda attributes her baking passion to growing up in a family of great cooks. This coconut pie makes a nice gift packaged right in the disposable pan it's baked in.

  1. Line piecrust with parchment paper; fill with pie weights or dried beans.
  2. Bake at 400° for 10 minutes or until crust is lightly browned.
  3. Remove paper and weights.
  4. Combine sugar and flour in a large bowl; stir in eggs.
  5. Add coconut and remaining 3 ingredients, stirring well.
  6. Pour filling into prepared piecrust.
  7. Bake at 325° for 35 to 40 minutes or until pie is set.

Yield: 1 (9") pie.
