Cajun Chicken Florentine

  1. Boil noodles according to package directions.
  2. In the meantime, make sauce.
  3. In a medium sauce pan, melt butter.
  4. Add flour and blend well.
  5. Gradually whisk in milk, spinach, cheese, garlic powder, salt, and pepper.
  6. Cook over medium heat until thickened, stirring frequently.
  7. Cover and reserve.
  8. Heat oil over medium-high heat in large frying pan.
  9. Liberally sprinkle chicken with Cajun seasoning
  10. Sear chicken on both sides, reduce heat to medium, and cook thoroughly (about 10 – 15 minutes), turning occasionally.
  11. Serve noodles on plate, top with a chicken breast, and spoon sauce over.
  12. Garnish with freshly chopped parsley and extra Parmesan cheese, if desired.
