- 4 California avocados
- 2 Tbsp fresh lemon juice
- 1 Cup finely diced red bell pepper
- 1 Cup cherry tomatoes, cut in half or quarters if large
- ½ Cup thinly sliced green onion
- 5 large cloves garlic, chopped finely
- 2 tsp chopped, fresh thyme leaves
- 1 tsp salt
- ½ tsp freshly ground black pepper
- ¼ tsp cayenne pepper

Coarsely mash (DO NOT PUREE) California avocados; stir in lemon juice. Fold in remaining ingredients. Serve with Shrimp, corn bread sticks, batter-fried oysters, celery sticks.
Guacamole is best made as close to service as possible. Store in an airtight
