  1. Move oven rack to position slightly above middle of oven. Heat oven to 500 °F.
  2. Remove and discard skin from fish. .
  3. Cut fish into 2 x 1½-inch pieces.
  4. Mix buttermilk and egg white with fork.
  5. Mix cornmeal, breadcrumbs and Cajun Creole seasoning.
  6. Dip fish into buttermilk mixture, then coat with cornmeal mixture.
  7. Place in ungreased rectangular pan, 13x9x2 inches.
  8. Lightly spray cooking spray on fish.
  9. Bake uncovered about 10 minutes or until fish flakes easily with fork.
  10. Serve with lemon wedges.
