  1. In medium bowl toss together pork strips with Cajun seasoning to coat evenly.
  2. In large nonstick skillet heat oil over high heat, stir-fry pork until nicely browned, about 4 – 6 minutes.
  3. Add celery, onion and garlic to skillet and cook, stirring often, until onion is almost translucent, about 3 – 4 minutes.
  4. Add pecans and cook to heat through.
  5. Serve over rice.
