  1. Heat oil in a cast iron skillet over high heat.
  2. Add onion, Cajun seasoning, and pepper; sauté 3 minutes.
  3. Add butter and garlic; sauté 30 seconds.
  4. Add scallops; cook 1 minute or until browned.
  5. Sprinkle with hot sauce; turn.
  6. Cook 3 minutes or until done.

Yield: 2 servings (serving size: about 5 ounces scallops)
