  1. Combine rice, celery, tomato, green pepper, onion and cheese in large bowl.
  2. Chill.
  3. When ready to serve, add mayonnaise, salt and seasoned pepper; toss lightly.
  4. Serve on lettuce leaves.
  5. Or, for a festive touch, pack salad firmly into 6-cup ring mold.
  6. Unmold on lettuce leaves.
