Callaloo Bake

Ingredients

• 1 bunch callaloo cooked and diced
• 1 diced onion
• 2 slice bacon fried and diced
• 2 tbsp grated cheese
• ¼ cup crushed potatoes
• 1 cup bread crumbs

Directions

1. Mix first three ingredients in a casserole.
2. Top with breadcrumbs, cheese and potatoes.
3. Bake for about 35 minutes in a moderate oven.
