Caper French Dressing

• This recipe yields about 1 cup of vinaigrette.

Ingredients

• 2 tablespoons red or white wine vinegar
• ½ teaspoon salt
• freshly ground pepper
• 2 teaspoons Dijon-style mustard
• 1 small clove garlic, minced
• 6 tablespoons salad or olive oil
• 2 teaspoons chopped capers
• ½ teaspoon anchovy paste

Directions

1. Measure vinegar, salt, pepper, mustard, capers, anchovy paste and garlic into a salad bowl.
2. Mix with a fork until blended.
3. Slowly add oil, beating with a fork until the mixture thickens.
4. Or place all ingredients in a jar and shake well until blended.
