You won't see the white chocolate in this thick sauce, but you'll know it's there when you take a taste and experience the sublime buttery flavor.
Ingredients[]
- 1 cup water
- 2 cups sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 (4-ounce) premium white chocolate baking bar, chopped
Directions[]
- Pour water into a large heavy saucepan.
- Add sugar to center of saucepan.
- Cover and bring to a boil over high heat.
- Uncover; attach a candy thermometer to side of pan, and cook about 15 minutes or until thermometer reaches 300°.
- Reduce heat to medium; cook about 5 more minutes or until thermometer reaches 350°.
- Meanwhile, bring whipping cream to a simmer in a small saucepan.
- Remove caramel syrup from heat.
- Carefully add about half of hot cream to caramel (mixture will bubble up).
- Gradually add cream. vanilla, and salt; let bubbling subside.
- Add white chocolate (it will look like it's going to separate); whisk gently until smooth.
- Cool to room temperature.
- Pour into gift jars.
- Cover and chill up to 1 month.
Yield: 2 1/3 cups
