Caramel sauce[]

  1. In a small skillet, heat both sugars, evaporated milk, and butter.
  2. Cook until sugar caramelizes (i.e., melts and starts to turn brown).
  3. Stir in 2 oz white rum and cool.

Assembly[]

  1. Slice 4 bananas.
  2. Arrange ½ banana per person in compote dish.
  3. Spoon 3 to 4 tbsp caramel sauce over bananas.
  4. Sprinkle with 1 to 2 tsp chopped peanuts.
