Caramelized Onion Marmalade

1 T. butter 3 T. brown sugar 10 cups thinly sliced sweet onions, about 4 large 2 garlic cloves, minced 2 T. red wine vinegar 3/4 t. salt 1/8 t. black pepper

Melt butter in large nonstick skillet over medium heat. Add sugar to pan; cook 1 minute or until sugar dissolved. Add onion and garlic to pan. Cover and cook 30 minutes or until onions are very tender, stirring occasionally. Uncover and add vinegar to onion mixture. Cook, uncovered, 10 minutes or until golden brown. Stir frequently. Stir in salt and pepper. Makes 12 servings. source: Cooking Light
