"I love carrots," says Trish Conroy. "They're great as a side dish." This old-fashioned bake, she says, has become a family favorite.

  1. Cook carrot in boiling water to cover 45 minutes or until very tender.
  2. Drain.
  3. Process carrot in a food processor until smooth, stopping to scrape down sides.
  4. Stir together carrot purée, eggs, and remaining ingredients.
  5. Spoon into a lightly greased 1-quart baking dish.
  6. Bake at 350° for 45 minutes or until set.

Yield: 6 servings
