Big casserole

  1. Cook sausage until done, stirring often to crumble.
  2. Drain off all but 2 tablespoons of drippings.
  3. Set aside.
  4. Sift cornmeal, salt and baking soda together into mixing bowl.
  5. Add milk, egg, rice, corn, onion, chiles, pimento, cheese and sausage, stirring only to blend well.
  6. Pour into 10-inch oven-proof skillet or 1½ dozen muffin tins which have been greased and sprinkled with cornmeal.
  7. Bake at 375°F for 40 to 45 minutes.
