There are a lot of vegetarian dishes in the cuisine of Afghanistan. Many of them are very delicious. All the entrees are served with the traditional Afghan bread and Salaata.
Qorma-i-Sabzi: a very popular Afghan vegetarian dish comprised of spinach, cilantro, parsley and scallions served with Basmati rice.
Qorma-i-Tarkari: another vegetarian dish made with cauliflower, baby carrots and potatoes, cooked with a blend of dill, turmeric and cumin, also served with Basmati rice.
Ashak: made from fresh pasta, filled with scallions, leeks and cilantro, this dish is served with yogurt-garlic sauce and topped with a mildly spiced tomato and onion sauce and sprinkled with mint flakes. This vegetarian dish is absolutely lip-licking.
Kabuli Palaw: an intensely famous dish in Afghanistan. There is a generous portion of Basmati rice. It is cooked in the oven in a special blend of saffron, black pepper, cardamom, coriander and cumin, topped with raisins, nuts and julienne carrots. This Afghan vegetarian dish is definitely one of the most tasty vegetarian dishes in Afghanistan and very popular indeed!
