There are different types of salads used in conjunction with traditional dishes. Salads such as "Khazar", "Azerbaijan", "Bahar", red caviar salad, salad a la Shaki, kuku of greens, kuku of kutum (kind of fish), kuku with nuts, fisinjan of beans, red beet etc. are the most spread salads. Other salads may include popular Azerbaijan ingredients such as pickled garlic, capsicum, eggplants, khyafta-bedjar, onion, pickled onion with sloe, pickled grapes and tomatoes. Salads are generally light and often served with different home made dressings – mayo being a very popular salad dressing.
