Barbados offers a wide variety of local dishes made after traditional recipes such as:
- Steamed Flying Fish made with flying fish fillets, limes, salt, Barbadian seasonings, sliced onion, minced garlic, green pepper bell, fresh thyme, fresh marjoram, chopped parsley, chopped tomatoes, limejuice, water, hot pepper sauce, curry powder, margarine and seasoned salt.
- Ham and Black eyes in Coconut Milk made with Black eye peas soaked in water overnight, sliced ham, minced garlic, chopped onion, thyme, marjoram, basil, liquid smoke, salt, coconut milk, water and hot pepper sauce. It is served over boiled rice.
- Coo-Coo Fungi is made with soaked okras, cornmeal, water, salt, margarine, chopped onion and minced garlic. Coo-coo Fungi is usually served with Steamed flying fish.
