The Colombian appetizers are found in various cooking styles, some with Mexican influences and some simply cooked. The traditional Colombian chicken soup, called sancocho de gallina is thicker, more consistent and sourer than the usual one found in the Western cuisine, as it includes vegetables. The recipe of arepas contains precooked white corn, butter and salt, a composition which is formed into flat tortillas and roasted over the fire. The empanadas, which are also famous in Argentina, are really unique in Columbia. These are prepared in various styles, but the empanadas paisas, also called meat-filled turnovers, contain 2 kinds of meat: pork and beef and are sweetened with brown sugar. Many Colombian desserts are thick milk based sweets. A traditional Colombian dessert is represented by arequipe: milk, sugar, egg yolks and cinnamon are mixed in a saucepan, but this composition must be mixed for almost 5 hours with a wooden spoon.
