The traditional Colombian chicken soup, called sancocho de gallina is thicker, more consistent and sourer than the usual one, as it includes vegetables. The chicken soup is prepared with chicken stock, peeled and cut yucca, plantains, scallions, red potatoes, whole chicken breasts, and cumin and lime juice. Another consistent soup is the ajiaco, also called Bogotá’s chicken and potatoes soup, which also includes corn, garlic, capers, avocados, guacos and heavy cream. A specific Colombian soup, known in the world under the representative name Colombian soup, is a meat soup, which includes beef stew meat or ox tail (in some cases, even chicken wings or breast without skin). The soup is heated in a Dutch oven and veggies are added to the meat: radishes, onions, bell peppers, plantains and yucca. The cassava yucca bibingka soup also contains fresh grated yucca, coconut milk, melted butter, coconut cream, grated cheese and sweetened with sugar.
