Some of the most served appetizers in any hotel in Fiji are made with fish or seafood. There are many ways of cooknig them and this may vary from Island to Island. For instance on Vomo island a fish appetizer is made with halibut fillets combined with coconut cream, onion that must be very finely chopped, green chilli, tomatoes and it is garnished with lettuce leaves. Appetizers can be also made from fresh fruits or vegetable and served cold. Such an appetizer is called Fijian coconut chuntney and needs no more than 10 minutes to prepare. It is made with coconut, freshly chopped coriander (used to enhance the flavors), lemon juice and root ginger. At the end a small amount of freshly chopped green chilli can be added. This dish can be also served as an accompaniment to meat dishes or curry.
