During the hot summer days in Fiji, it seems that nothing goes better than refreshing fish soup. This soup called Kokoda is made from fresh fillet fish, limes, coconut cream, tomatoes and green chilly and it would taste better if served cold. In Fiji soups are most of the time served during the main meal of the day as a starter. Another famous soup served in this country is called Chicken and Squashed soup. It is very easy to prepare and is made with chicken breasts, lime juice half peeled pumpkin, tomatoes and coconut cream. It should be served as a main course along with some breadfruit or boiled taro.
