The Filipino cuisine is a much diversified and most interesting cuisines, a bold combination of sweet, sour, and spicy. The ingredient that stays at the basis of most of the dishes is the rice that can be fried, boiled, baked or mashed in different dishes. Seafood and chicken are the main meats used in this cuisine, prepared usually with sweet, hot or mild spices like siling labuyo are used chilies, tamarind, brown sugar, lemon grass, sweet pickled papaya, garlic and ginger. Soups, usually made with coconut milk, sweets and desserts are also important to this cuisine. Dishes that best represent this cuisine are Adobo, made from chicken, pork, squid or vegetables stewed in vinegar, soy sauce, garlic, peppercorns and bay leaf, Lumpia which are actually rolls filled with vegetables and meat, a slightly sour soup served with rice, called sinigang, and the bistek, representing beef and onion rings braised in soy sauce. For festivals and celebrations, Philippines people prepare lechon, a suckling pig, slowly roasted over live coals to make it crispy and tasty.
