we have made fantastic soup with GKH - just like you make spinach soup - soften an onion and a potato in a little oil and butter, add smallish amount vegetable stock, simmer till they are cooked, add chopped GKH leaves , cook for a couple of minutes, liquidize, add milk and cream and adjust seasoning...
could try sometimes adding a few peas and perhaps a tiny bit of mint...
