Usually, people have the tendency to think of salads, no matter what the ingredients are, as a sort of appetizer, which is served before the meal and having the purpose of wetting the appetite for the main course. However, salads play quite a different role in the Hong Kong cuisine. First of all, the Asian cuisine is not familiar with the variety garden salad. Secondly, a Hong Kong salad, a noodle salad for example, can sometimes be served as a main course or even an entire meal. The salads in the Hong Kong cuisine are supposed to provide a balance with other dishes. The mixture of textures, flavors and colors are one of the main characteristics of the Hong Kong cuisine. The salad can also be served as a sorbet in order to clear the palate after spicy dishes. Another important characteristic of the Hong Kong salads is the amount of care taken for the appearance of the salad.
