The Laotian appetizers are represented by soups, rice mixtures and salads. The sweet and sour tofu salad is made of bean curd cubed tofu, sliced onions, carrot strips, sliced celery, red bell peppers, broccoli, green beans, soy sauce, tamarind concentrate, tomato puree, chili sauce, sugar, white vinegar and corn flour. Rice is consumed as sticky rice or khao neeo, which is made of long grain glutinous rice. The soups which are served as an entree are best represented by the hot and sour mushroom soup, which is made with vegetable stock, pepper sauce, lemon grass, kaffir lime leaves, sugar, lemon juice, oyster mushrooms and fresh green chilies.
