Most of the Latvian appetizers are served cold and these are: pork in aspic with flavouring vegetables like carrots, onions, parsley, and celery, salt, pepper, and bay leaves; herring with vegetables with boiled carrots, green peas, beetroot, sour cream, horseradish, sugar, salt, and spring onions; summer solstice cheese with skim mil dry cottage cheese, milk, sour cream, butter, eggs, caraway seeds, and salt. Bacon rolls filled with onions, or sweet platter breads topped with apples, berries, and sweetened cottage cheese or dried apples are great Latvian snacks.
