Everyone imagines that this category includes a lot of sortiments like: horseradish relish sauce with onions, tomatoes, grated white horseradish, coconut milk, butter, turmenic, cornstarch, and water; pineapple chutney which is prepared with green pepper, onions, lemons, oranges, tomatoes, black seeded raisins, fresh pineapple, white vinegar, white sugar, dark brown sugar, preserved candied ginger, and salt; mango salad with fresh pineapple, apricot nectar or orange juice, lemon juice, lettuce cups, and fresh strawberries; spinach and groundnuts with coconut, peanuts, pepper, salt, which can be served with meat, poultry, or fish entree; spinach saute and groundnuts with onions, margarine or butter, peanuts, spinach, Tabasco, salt, and eggs; limones y aceitunas en escabeche or pickled lemons and olives, which consists of lemons, salad oil, vinegar, black olives, salt, and water and it can be served with fish, meat, or poultry. Of course, there are many other recipes but these seem to be more popular or, at least more preferred by Malinese people. In West Africa and not only, you will find real sources of life as people are seriously interested in the way they cook, choosing carefully all the ingredients. It seems they have a special ingredient used in preparing every recipe, appetizer, soup, meat dish, snack, or salad. Maybe this is the love and respect for their own cuisine, for their traditions, and also the attitude as a symbol of respect, kindness and friendship for all the others.
