To prepare eggplants stuffed with mushrooms you have to peel the eggplants, cut them in to pieces and remove the core; fry the minced mushrooms with the garlic and the green parsley then introduce the mixture into the eggplants and fry them in a pan with oil, chopped onion and flour.
