One of the most delicious Mozambican soups is the Tomato Avocado Buttermilk Soup. The main ingredients for this soup are: peeled and seeded tomatoes, tomato paste, buttermilk, olive oil, pureed avocado, lemon juice, minced fresh parley leaves, salt and pepper and “Piri piri” hot sauce. The garnish is made of one peeled, seeded and diced cucumber and plain yogurt. The tomatoes are pureed and added in a large mixing bowl next to the tomato paste, buttermilk and olive oil. The pureed avocado is mixed with one tablespoon of lemon juice and added to the mixture. The lemon juice and the minced parsley are also added to the tomato and avocado mixture. This mixture is seasoned with salt, pepper and “Piri piri” sauce and refrigerate for a couple of hours before serving. This Mozambican soup is served with the cucumber and yogurt garnish. The Mozambican Peanut Soup with Okra Croutons is a tasteful soup made of peanut oil, red pepper flakes, coriander seeds, diced celery, minced carrots, diced potatoes, lemon juice, salt and pepper, “Piri piri” sauce and unsalted roasted peanuts. The Okra croutons are made of sliced okra, cornmeal, cumin, cayenne, herbal salt and olive oil spray.
