Cooking techniques of Guinea always combines meat and fish. Besides this most of their recipes include exotic ingredients that can be easily found on their fields or are being imported from other African countries. Tow of the most served dishes in Guinea and all over Western Africa are named Jaollof Rice and Chicken Yassa. These dishes are very famous for their delicious taste. Also they are quite easy to prepare.
Jollof Rice- is a dish made with chicken, onions, salt, black pepper, cayenne pepper. For a better taste and for flavoring African chef’s use chopped pepper, garlic, chopped tomatoes, chopped sweet green pepper, dried shrimp and curry powder. In the end the plate should be garnished beside the boiled rice with fresh parsley and cilantro and chopped or shredded lettuce.
Chicken - Another specific Guinea dish made with chicken and many special ingredients. For a fine taste those who decides to cook this dish should also use lemon juice, malt vinegar or cider vinegar, mustard, minced garlic, onion, green chilli, salt and pepper according to taste. The plate should also be garnished with rice or couscous. Another two dishes that are often being served in Guinea and are two of the local’s favorites are the Groundnut Soup and the Yam Fu Fu dish.
