The Nicaraguan appetizers are consumed mostly on family feasts and contain both animal and vegetarian products. The chicken tamales with all the extras is a complex entry, which includes flour, milk, chicken broth, mashed potatoes, vegetable oil and lemon juice for the dough and lemon juice, garlic and chicken breast for the filling. The Indio Viejo is another famous dish, prepared with red or black beans, onion, bell pepper, green onions, margarine, tomatoes, buttermilk or sour cream, eggs, garlic and vinegar. The mixed vegetable salad is another appetizer that contains kidney beans, green beans, cabbage, tomatoes, salad oil, cider vinegar, sugar and avocado.
