A famous meat meal is represented by the oxtail stew, which is prepared with uncooked white beans, lard, beef oxtails, garlic, yellow onion, tomatoes, beef stock, allspice and hot sauce. The ensalada de jicama y naranja, translated as jicama and orange sold is prepared with habanero chili powder, segmented oranges, jicama cut in juliennes, thin sliced scallions and chopped cilantro as a garnish. The Indio Viejo is another famous dish, prepared with red or black beans, onion, bell pepper, green onions, margarine, tomatoes, butter milk or sour cream, eggs, garlic and vinegar. Most of the Nicaraguan desserts are based on milk, locally called leche and they have a soft texture.
