Paraguayan salads (called ensaladas) are based on veggies, but they usually accompany meat meals – this is why the enslaladas mostly exclude any kind of meat.. Ceviche is found in many countries with similar backgrounds. The Paraguayan ceviche is light and refreshing, as it contains sea scallops or bay scallops, lime juice, chopped onions, Spanish olives, olive brine, peeled tomatoes, hot ketchup and dried oregano. Another famous salad is the mandioca ensalada, which is prepared with cooked and chopped mandioca, mayo and salt and pepper, but the recipe also has variations that include hard boiled eggs (chopped or squash), cooked and chopped carrots and cooked and seasoned peas.
