San Marino pollo (chicken) is prepared with whole chicken breasts, slices of Fontina cheese, prosciutto or ham, beaten eggs, bread crumbs, butter, whipping cream and flour. The famous pastas include the gnocchi Bolognese (with ground pork, beef and vegetable tomato sauce with a touch of cream), penne arrabiata (hot peppers, olives, capers, onions, mushrooms and plum tomatoes), campanella with mozzarella cheese, romano, onions and prosciutto or rotini triesta. The stuffed filet of Sole includes spinach, fresh veggies and a seafood stuffing and the baked scrod al forno includes bread crumbs, white wine, butter and vegetables. The San Marino desserts include tiramisu, cannoli, various rice puddings, cheesecakes, parfaits and the traditional crème brulée.
