Shorba is one of the most traditional meat dishes and it is based on lamb meat (and lamb bones); shorba also means puree of lamb Khartoum, but it actually looks like a soup. The koftahs (meatballs) are specific for all Arabian dishes. Salata ma jibna is also named salad with parmesan cheese. These combines in an ingenious way, cabbage, carrots, tomatoes, onions, lime juice and white vinegar and it is tossed with olive oil and sprinkled with more garlic. The lentil soup is one of Sudanese’s favorite dishes. This soup is made of ads magroosh, or split red lentils, chicken or lamb stock, carrots, tomatoes, onions, olive oil and lime juice. Crème caramel, also known under the name Sudanese caramel custard, is prepared with melted butter, a lot of eggs, milk and vanilla or better yet, banana extract. The vegetarian meals in Sudan include beans, tomatoes, onion and different kinds of traditional breads.
