Sudanese salads include many veggies, like tomatoes, cucumbers and cabbage and sometimes cheese. Salata ma jibna is also named salad with parmesan cheese. These combines in an ingenious way, cabbage, carrots, tomatoes, onions, lime juice and white vinegar and it is tossed with olive oil and sprinkled with more garlic. Another famous Sudanese salad is the saltet zabady bil ajur, which is popular in Egypt, Turkey and in the Balkans. This salad is basically a cucumber and yoghurt salad, which contains finely minced garlic, peeled cucumber and then finely diced, fresh ground pepper and plain yoghurt. Tomatoes are one of the Sudanese’s` favorite aliments, so they are intensively used in salads. The Salata tomatim bel daqua (or Sudanese tomatoes salad) is the clearest example. The tomatoes are firstly peeled and then diced; finely green onions are added, among with smooth peanut butter, Italian parsley, green chilies, vegetable oil and lime juice.
