The Venezuelan salad named “Quasacaca” is made of tomatoes, onions, avocados, bell peppers, cilantro leaves, lemon juice, salt and hot sauce. All these vegetables have to be hand chopped and mixed together. It can be used as a dip for the corn chips. The green beans and tomato salad can be eaten cold or warm and it goes well with pasta and rice. The main ingredients for this salad are green beans, cherry tomatoes, crushed garlic, olive oil salt and pepper. The green beans are boiled in water until they are dente, after that they are drained and put in a bowl with cold water. The garlic is cooked in olive oil for about five minutes, then the tomatoes and the rice are added. Next step is to mix them all together and to add salt and pepper. This Venezuelan dish is very easy to prepare and delicious. Orzo and roasted vegetables salad are made of: eggplants, zucchini, red bell pepper, red onion, garlic, olive oil, kosher salt, black pepper and orzo or rice. The eggplants, zucchinis, bell pepper, onion and garlic are tossed with olive oil, salt and pepper. Next step is adding the garlic. Meanwhile the orzo is cooked in boiled salted water. Finally they are mixed together and served warm.
