Vegetable Fried Rice is made of soy sauce, rice wine, salt, peanut oil, eggs, carrot, red bell pepper, frozen peas and cooked rice. First, the sauce is prepared, so all the ingredients need to be combined. The eggs are heated in peanut oil and broken in small curds. The carrots are boiled in a small saucepan. Next, the carrots, celery, red pepper and peas are mixed and heated in a wok. The Crisp-Fried Tofu and Greens is made of cakes of tofu, water, cornstarch, gingerroot, garlic, soy sauce, dry sherry, rice vinegar, honey, oil, onion, “pak choi”, chard, kale and chopped spinach. The tofu is cut into four triangles. The ingredients which form the marinade are mixed and poured over the tofu triangles. They will stay like this for 10 minutes. In a separate bowl, the water is mixed with cornstarch. The tofu is rolled in cornmeal or cornstarch and fried. The leftovers from the marinade are added to the sauce mix. Next step is to fry the drain tofu. Some oil needs to be put in a wok in which the vegetables will be added and fried until they will be tender. The last step is to add the fried tofu.
