Beef, lamb, chicken, turkey and fish are eaten in Yemen, but pork meat is forbidden on religious considerations. The stewed beef shank, locally called hor`i is a spicy meat dish, prepared with beef with bones, cut into quarters onions, cloves of garlic, chopped tomatoes, hewayij, hot chili, salt and fresh ground pepper. Fish is also eaten, especially in the Yemenite Fish in tomatoes sauce, or samak Yemeni, which includes tomatoes sauce, fish spice, hawajui, pepper, scallion, all added on the firm white fish fillets. The most eaten fish are: cod, whiting and flounder and the fish is usually fried in olive oil. A famous meal dish is the Yemeni filo, which includes samboussek, ground beef, finely chopped onion and garlic and a lot of spices: salt, curry, cumin, coriander and pepper. This meal is beautifully decorated with leaves of lettuce. Turkey meat and chicken are prepared with veggies, cantaloupes or cooked rice and are flavored with lemon juice and parsley.
