Start Christmas Day the gourmet way! These quesadillas whip up quick with crisp tortillas, goat cheese and pears - a delicious blend of sweet and savoury ingredients that creates an elegant brunch option
Ingredients[]
- 1/2 cup (125 ml) soft goat (chèvre) cheese
- 3 tbsp (50 ml) chopped fresh basil
- 2 tsp (10 ml) liquid honey
- 4 whole-wheat flour tortillas (10 inch, 25 cm, diameter)
- 2 medium unpeeled pears, sliced
- 1 tbsp (15 ml) balsamic vinegar
Directions[]
- Combine first 3 ingredients in small bowl.
- Spread over tortillas, almost to edge.
- Arrange pear over half of each tortilla.
- Brush vinegar over pear.
- Fold tortillas in half to cover filling.
- Press down lightly.
- Arrange on greased baking sheets with sides.
- Cook in 425°F (220°C) oven for about 12 minutes until filling is heated through and edges are crisp.
- Cut into 4 wedges for a total of 16 wedges.
